Port Salut® was originally created in 1816 by Trappist monks at the Abbaye du Port du Salut in Entrammes in the Loire Valley.
Although the principal occupation of the monks was prayer and study, the monks needed to work to provide for their material needs and soon started producing their own cheese.
The reputation of the monk’s unique cheese soon spread and before long it was being sold throughout the local regions. By 1873 it had even reached the Parisian market and the weekly delivery was so eagerly awaited that a flag was raised announcing "The Cheeses have arrived!"
The brand "Port du Salut®" was officially registered in 1874 and thereafter became commonly known as Port Salut®. Today it is the only product allowed to bear that name - all cheeses made using a similar production method are called St. Paulin.
Up until 2005, Port Salut® was still produced in the original grounds of the Abbaye du Port du Salut. Although the production facility has now moved, Port Salut® continues to be made using the traditional recipe created by the monks back in 1816.
